His interest in cooking emerged from his home only as his mother was a restaurateur and thereby started cooking in her mother’s catering business. In 1994, he initiated his career by working for Prudhomme in New Orleans. In 1996, he pursued study in culinary arts and on its completion worked under Douglas Rodriguez, a nuevo-Latino chef and also at Rose Pistola under Chef Reed Hearon. He remained executive chef at various renowned places like the L-Ray, Isla, Centrico which was a Mexican New York eatery etc.
Paladar restaurant opened by Eamon Furlong with the help of Aaron was a big success and it was also honored with the Time Out New York's Best New Lower East Side Restaurant of the year in 2001, Best Latin American Restaurant in 2002. But in 2010 Aaron transferred his interest in the restaurant. In 2014, he opened Johnny Sánchez in partnership with chef John Besh with locations in New Orleans, Maryland, and Louisiana.
Talking about his television appearances, Aaron Sanchez is the co-star of Chopped, a Food Network’s series and the host of various shows like Taco Trip, a show on Cooking Channel, Melting Pot, Heat Seekers etc. He has appeared as a contestant on Iron Chef America, Battle Black Bass Season 2, The Next Iron Chef and has also adjudged numerous cooking shows.
